Brown Sugar Mushroom Meatloaf

If you’re a meatloaf lover, you’re definitely in the right place!! There’s nothing like a home cooked meal. When I think of a cozy meal from scratch, MEATLOAF is definitely in the top choices for me!

My mother-in-law taught me how to make her meatloaf and since that moment I’ve been HOOKED! Once you learn the process, you appreciate whatever it is that much more! She was so kind to let me share her recipe. I’m pretty sure we need to create a “Cooking with Connie Carey” segment on here. You guys would LOVEEEE her! She’s my favorite person and such a wonderful role model to all women. I lucked out in the Mother-In-Law Department!

Get In The Kitchen! Try New Recipes!

Before you knock meatloaf.. you HAVE TO TRY THIS RECIPE! Not kidding. I really believe that if you don’t appreciate or like a food that once you learn how to make that dish and give it the full opportunity to grow on you– then and only then you can choose whether or not you truly hate/strongly dislike it. I’ve learned this from spending more time in the kitchen and it’s truly changed my view on food, cooking and opening your palate to more. Find a recipe that excites you around that food that maybe isn’t your favorite and see where it takes you! Your horizon could be immensely broadened!

Most all of the dishes I love and make frequently.. I once wasn’t a fan of. CRAZY!!! It just shows how much learning and proving yourself in the kitchen leads you to more open doors than you ever thought.

Ok, now back to Meatloaf!!! Premium Ground Beef mixed with mushrooms and the most delicious seasoning mix that your family will go crazy for!! Serve with your sides of choice or eat by itself (it’s that good!)!!!! Sweet, yet savory and allllllll things DELICIOUS!

Personally, I double this batch. I’m not kidding, once you make you’re first loaf of this goodness you will be doing the same! Even your most picky eater will enjoy this!

Steps To Make The Meatloaf

Add the Ground Beef

Quality DOES and ALWAYS will matter in the kitchen. If you can, invest in high quality ingredients and you will notice the difference. I opt always for higher quality beef. I usually go with Wagyu Beef in alllll recipes! Once you start with Wagyu — you DON’T quit!!!

Add the Tomato Sauce

Add the Egg

Add the Mushrooms

Add the Chopped Onion

Add the Saltine Cracker Crumbs

Add the Salt & Pepper

Mix with Hands

Make Sure it’s Fully Combined

Press into Loaf Pan

As well as high quality ingredients… I am a lover, believer and preacher of high quality baking supplies, pans, tools, appliances, etc. Sometimes there’s a way around higher end options…. BUT most of the time you will regret choosing it because it will wear out faster and need to be replaced sooner. And for me, I think longterm and not having to replace it 6 months or a year later. You truly are saving money in the long run.

Description

The one and only meatloaf recipe you will continue to create for your family. A sweet but yet savory meatloaf that will become your favorite home cooked meal! Elevated flavor with a simple timeline and stress free menu planning choice!


Ingredients

Scale

Meatloaf Ingredients:

  • 1 1/2 pounds Ground Beef
  • (1) 8 oz. can Tomato Sauce
  • 2 Beaten Eggs
  • 1/2 cup Saltine Cracker Crumbs
  • (2) 4 oz. can Stem & Pieces Mushrooms
  • 1/2 cup Finely Chopped Yellow Onion
  • 1/2 tsp. Pepper
  • 1 tsp. Salt

Sauce Ingredients:

  • 1/2 cup ketchup
  • 10 Tb. Brown Sugar

Instructions

  1. Combine all ingredients in a large bowl and mix together with your hands until fully incorporated.
  2. Form into loaf pan.
  3. Make a “ditch” down the center of the loaf.
  4. Pour half of the sauce into the ditch of the loaf.
  5. Bake at 350 degrees for 1 hour & 15 minutes.
  6. Slice into individual servings.
  7. Pour extra sauce over top.
  8. ENJOY!

    We used ground bison and fresh mushrooms in this recipe. My kids all inhaled it and they don’t typically like meatloaf. There was not a single slice left for leftovers. Delicious!!!!
