Peach Pear Blueberry Arugula Salad!

Summertime is in full-swing and for Christopher and I, that equates to a kitchen filled with all different fun salads! Different seasons bring such a diverse choice of ingredients that are bountiful for our use! It always feels good to know that we are eating fresh, healthy and as locally sourced as we can!

You get the best flavors and you feel fulfilled both nutritionally and knowing you are giving back to the hard farmers you’re surrounded by! My little two sense is to ALWAYS shop local as much as you possibly can! It may be a little pricier in some ways but in the end you are always doing more good. Not only for you and your enjoyment/health but for your community! That in itself is worth shopping at farmers markets and being picky about where your produce comes from!

Peach Pear Blueberry Arugula Salad!

Today I’m going to share with you a SUPER simple salad where you don’t have to make a homemade dressing and it takes less than 5 minutes to prep + assemble! Usually I prefer to make a homemade dressing but a store-bought dressing is easier if you’re in a rush!! There is no need to feel guilt, have balance in all things!!

I will be sharing homemade dressings that are also easy down the road but the dressing I use on this salad is my LOVE! I’ve used her for years and I always have to have a full bottle in the fridge!

Litehouse Pear Gorgonzola Dressing & Marinade. She goes amazing on all different types of salads and you will see when you give her a try why I’m so obsessed!!!! <3

We absolutely love love LOVE Arugula.. I don’t know what it is but we are crazy about the bitter flavor it gives. Complimenting that bite when you add in some seasonal fruit and a yummy dressing, you will fall in love too! Throw some lean protein on top and you have the perfectly balanced meal for your family.

If you make salads fun and playful the misconception and stigma around them and how MEH they can be, just fall to the wayside! You can make anything in your life upbeat, fun and happy! Salads give you the full capability to use your creativity and preferences to find your absolute FAVE combination!!!

Peach Pear Blueberry Arugula Salad

Description

This sweet & tart salad is all you will be craving on a hot day! Refreshing, filling and creative. Make this your dinner by throwing on some grilled chicken! You will be in LOVE!


Ingredients

Scale
  • 6 cups Arugula
  • 1 Peach
  • 1 Pear
  • 1/2 cup Blueberries
  • 4 tbsp Litehouse Pear Gorgonzola Salad Dressing
  • 4 tbsp Gorgonzola or Feta Cheese
  • 2 Grilled Chicken Breast (Optional! This will take your salad to the next level and create a well rounded meal!)

Instructions

  1. Wash all three of your fruits: peach, pear & blueberries! Usually arugula comes pre-washed so I don't bother to wash that again.
  2. On your cutting board, use your knife to slice the pears & peaches into thin pieces!
  3. Take the arugula and put it into your mixing bowl.
  4. Dress the arugula with the Litehouse Pear Gorgonzola Salad Dressing! YUMM.
  5. Place one layer of arugula on each plate, add a layer of the three fruits over it, add another layer of arugula and plate your final layer of fruits on top. Make this one cute for presentation!!
  6. Optional: Place a grilled chicken breast on top of each salad!
  7. Put the finishing touch of gorgonzola or feta cheese on top and ENJOY!

Notes

This salad yields two large salads or you can make it as a side salad in smaller quantities with or without grilled chicken on top! Plate it equally, the same way and they’ll be perfect for your guests!
