Copycat Potbelly Sugar Cookies!

Potbelly Sugar Cookies are one of my ALL-TIME fave cookies! I know you all have been waiting for me to send/share this recipe and I’m SO HAPPY I’m now prepared to do so!

These are my go-to if I’m wanting a little sugar fix.. there is NOTHING better than a sugar cookie that is ooey-gooey on the inside and a little crisp on the outside! My heart has room for regular cut and frosted sugar cookies but these are also at the top of my list!

The baking time can be adjusted to how you like your level of soft vs crunchy! I personally like them this way but the recipe can be tailored to your preference! The taste is down and that is all that matters!!!

Oh my GOODNESS.. you guys!! I made my FIRST EVER YouTube video today of me making these cookies!!!!! I cannot believe I did this all on my own… It’s obviously not professional quality by ANY means whatsoever but I wanted to have a little tutorial for you all to be able to quickly watch to understand how to make them! Copycat Potbelly Sugar Cookies!

Description

Ooey-Gooey PERFECTION intertwined with a sparkling sugar crunch! These sugar cookies are about to be your new GO-TO and your guests will want to know the recipe!!!


Ingredients

Scale
  • 2¾ cup All-Purpose Flour
  • 1 tsp. Baking Soda
  • ½ tsp. Baking Powder
  • 1 cup Salted Butter; partially melted (some soft sections, some melted sections)
  • 1½ cups Granulated Sugar
  • 1 Egg
  • 3 Tb. Vanilla
  • Sparkling Sugar; small bowl for dipping!

Instructions

  1. In a small bowl, whisk together flour, baking soda and baking powder. Set aside.
  2. Partially melt butter in the microwave. Some butter should be melted and some should still be soft.
  3. In a mixer, or with a large bowl and hand mixer cream together partially melted butter and white sugar.
  4. Add in vanilla, mix until combined.
  5. Add in egg, mix until combined.
  6. Gradually add in dry ingredients into the wet ingredients. Mix until all ingredients are thoroughly combined. It should look a little fluffy!
  7. Cookie scoop larger balls of dough out. Roll them in your hand to warm the dough up just a little. Then roll them in (LOTS OF) sparkling sugar until fully covered!
  8. Place on silicone mat protected baking sheet and bake at 375 degrees for 8-9 minutes!! If they look under-cooked, DON’T overthink it!!! Pull them out and let them cool on the cookie tray for 8-9 minutes while the other tray is baking. Once its time to switch pans, let them cool on a rack for about 45 min – 1 hour and they should be all good to go!!! ENJOY!

    These are unbelievable!! I made them and the recipe had the perfect instructions and explanations. They do taste exactly like potbelly with the crispy edges and gooey inside. When I first made these, I ate 5. I also froze some extra dough balls and make them every now and then. Amazing recipe.

      Just found these after doing a search for a Potbelly copycat and they are everything I wanted and more! Have you ever frozen the dough? Or would it be better to freeze the cookies themselves?

        Hi Casie!

        First of all I’m so happy you love them as much as I do!!! They are a staple in our household and my one true love!!! YES! You can freeze the cookie dough!!! If I were you, I would roll out all of the dough balls. Stick them in the fridge for about one hour so they can harden and then transfer them to a freezer safe ziploc bag. They will keep in the freezer for up to three months. Label the bag with the date so you won’t forget the timeline. Once you’re ready to make the cookies, thaw the frozen dough for an hour on the cookie sheet. Once they’re softer, roll them in the sparkling sugar and bake according to the recipe’s instructions! Timing may vary a little bit since the dough was frozen but you will know when they look perfect since you’ve made them before! Please let me know if you have any questions at all!

    These cookies are delicious. Question: do you use clear imitation vanilla? When I used 3Tbs of pure vanilla extract, it turned my cookies dark, not at all like the ones you’ve pictured. Just wondering, as I’m hesitant to use 3Tbs of the imitation stuff.

    This recipe is accurate; these taste JUST LIKE the Potbelly sugar cookies. I made the dough ahead and froze them for 2 months and thawed, flattened and dunked in Turbinado when I was ready to bake them. They turned out great even when frozen.
